English Devonshire Clotted Cream with Brandy by The Devon Cream Company

Devonshire or Devon Clotted Cream has been produced in Devon and Cornwall, England on farms and small dairies for hundreds of years.

Clotted Cream traditionally achieves its thick clotted texture by pouring the milk of high fat breed cows, such as Jersey, into shallow pans made of enamel or stainless steel, and letting it settle so that the cream rises to the top. The pans of milk were slowly heat treated for many hours over a crudely made stick fire or stove until the cream was scalded and rich in acid and aroma producing bacteria. The cream was then left to cool and skimmed off into a glass dish taking care not to break the crust on top. Today, dairy or factory methods are much better controlled, using steam heated pans, but the principle is the same.

Devon Clotted Cream is traditionally served with tea, scones, and strawberry jam. The Clotted Cream is generously spooned over the jam on the scones and is enjoyed with a cup of tea.

French Brandy has been added to this genuine Devonshire Clotted Cream for a truly delicious taste. Use as a rich topping for apple pie, bread pudding, scones, muffins, waffles, pancakes and berries. It is extra special when added to soups or sauces.

Garlicky White Bean Dip Recipe

• 15 oz. can Great Northern Beans, drained well
• 1-1/2 teaspoons sea salt (or, to taste)
• 1-1/2 teaspoons fresh lemon juice (not from concentrate)
• 3 teaspoons Garlic Valley Farms Garlic Juice Spray
• 2 Tablespoons fresh basil
• 1 teaspoon balsamic vinegar
• 1 Tablespoon Dijon mustard
• Pinch of white pepper

Place all ingredients in a food processor and blend until smooth. Serve with crackers. How’s that for easy?
